After receiving positive feedback from Dave, I have decided to put another much loved recipe online. I was inspired by people talking pancakes, and the amount of people who were buying the mix already made and just adding milk. This sickened me. This recipe is for the thick american style pancakes, usually stacked as high as a house and drizzled with maple syrup (and in america often served with…streaky bacon?!?!?!?!)
Here is the recipe:
3 Eggs
2 cups flour
1 ½ cups milk
½ tsp salt
2tsp baking powder
3 tbsp sugar
½ cup of vegetable oil
Add flour, sugar, baking powder, salt in to bowl.
Separate eggs and add yolks to milk and mix
Add milk and egg combination to dry ingredients and mix with an electric mixer until all mixed together and bubbles start to appear on the surface
Add the oil and mix again until all the oil is mixed into the mixture.
Whisk the egg whites until thick. If you can turn the bowl upside down without it falling out then it is done enough.
Scoop the egg whites into the mixture and stir in with a wooden spoon.
Ladle the mixture into a frying pan to make pancakes with a diameter of approximately 10cm.
Whilst one side is trying add your choice of fruit or chocolate or marshmallows (experiment with different ingredients) into the mixture that is still wet. Flip the pancake, finish cooking and enjoy.
I recommend a low to medium heat so that the pancake can cook through without burning the outside.
